When we talk about a video game remake, we usually mean updating an old game using modern technology. A good example is Sonic 2 HD, which takes the old Sega classic and completely remakes it with new (much sharper) graphics and much better music.
A demake is the exact opposite. It takes a new game and reinterprets it with old technology. That's the key to this phenomenon: reinterpretation. Improving an old game usually doesn't present many creative challenges; you just add better textures, more polygons, etc. But creating a demake does require imagination, because... how do you fit a game like Halo into an Atari 2600?
